【COFE 葡萄酒 Bar】木杉葡萄&東方美人_喫的葡萄酒_ICA得獎作品

 來自葡萄釀造之後的風味延伸，這款「喫的葡萄酒」為我們與台灣精品酒莊 威石東 Weightstone 的聯名之作。選用釀製波波005木杉橘酒後所餘的木杉白葡萄皮——蘊藏酒液靈魂的芳香載體。經低溫冷凍直送加工，挑除多餘葡萄籽後凍乾製粉，封存其中微妙細緻的風土記憶。

 我們將木杉葡萄皮揉合東方美人茶與台灣原生金珠黃豆粉，並以可可脂為媒介，進行低溫長時間緩慢萃取，使茶與酒粕的香氣在潤澤中交融，再添以少量蔗糖，調溫塑型，化為可「喫」的風味之作。

入口時，荔枝、麝香葡萄般的芳香甜潤徐徐展開，清脆的綠果酸度與深邃茶韻相映成趣，單寧與茶多酚則為風味骨架，帶來精緻的澀感與回甘。其香氣輕盈飽滿、質地細膩綿密，像是一場從葡萄園延伸至味蕾的感官旅行。

這款作品不僅是對酒粕價值的延續與再造，更是我們繼咖啡、茶、花、果與香料之後，對台灣風味文化的又一次深刻書寫。
 

An aromatic extension of winemaking, this edition of Edible Wine is a collaborative creation with Taiwan’s boutique winery, Weightstone. It features the sun-kissed skins of Musann white grapes—used in the crafting of Weightstone’s BOBO 005 Musann Orange Wine—fragrant carriers of the wine’s soul, preserved after fermentation. Immediately frozen and delivered at low temperature, the grape skins are meticulously deseeded, freeze-dried, and finely milled to retain the subtle, terroir-driven nuances of the fruit.

We gently blend the Musann grape skin powder with Oriental Beauty tea and Taiwan’s native golden pearl soybean powder. The mixture is slowly infused over 48 hours using low-temperature cocoa butter, allowing the essence of both tea and lees to bloom and intertwine. A touch of cane sugar is added to round out the flavor, and the blend is tempered and molded into a bar—transforming wine into a form you can taste.

Upon tasting, floral and juicy notes of lychee and muscat grape unfold gracefully, followed by a crisp green fruit acidity that plays against the tea’s gentle depth. Tannins and polyphenols form the structure of the flavor, delivering a fine balance of astringency and lingering sweetness. The aroma is bright yet full, and the texture smooth and silky—like a sensory journey from vineyard to palate.

More than just a reimagination of wine lees, this piece continues our exploration of Taiwan’s flavor expressions—following coffee, tea, flowers, fruit, and spice—in a uniquely edible form.
